Festive Coconut Balls Recipe

Serve bite sized festive coconut balls with your cookie plate this Christmas.   This recipe is easy to prepare.  Plus, the coconut gives it a snowy appearance, perfect for this season and they pair well with coffee!

Festive Coconut Balls recipe

  • 1 cup shredded wheat cereal
  • 1 cup quick oats
  • 1 cups shredded sweetened coconut
  • teaspoon cinnamon
  • 2 tablespoons coffee liqueur
  • 1/3  cup honey
  • cup safflower oil (or any light oil)

 

Place shredded wheat in a processor and blend.  Add oats, 1 cup of the coconut and cinnamon and blend again.  While food processor is on, add coffee liqueur, and drizzle in honey and oil. Roll mixture into bite-sized balls, and then roll balls into remaining coconut.  Refrigerate for at least an hour before serving. 

Yield: About 2 dozen
