Maple Walnut Baked Beans Recipe

Headed to a back yard BBQ this weekend?  Need to bring a dish to share?  Well, impress your friends by bringing homemade Maple Walnut Baked Beans. Plus, this dish contains one of our favorite ingredients coffee!

Recipe is taken from Adventures in Coffee cookbook.

Maple Walnut Baked Beans

1 pound dried baby lima beans
cup of butter or margarine
5 tablespoons tomato ketchup
cup dark brown sugar
1 teaspoon dry mustard
cup brewed maple walnut flavored coffee
cup bean stock

Soak beans in water to cover, overnight.  Add more water if necessary to cover beans by 1 inch and bring to a boil.  Reduce heat and simmer 1 hour.  Drain, reserving stock.  Place beans in heavy casserole with lid.  Add remaining ingredients and stir gently until mixed.  Bake at 350 covered for 3 hours, checking every 30-45 minutes, and adding more bean stock as needed to keep from drying out.
