Maple Walnut Baked Beans
1 pound dried baby lima beans
cup of butter or margarine
5 tablespoons tomato ketchup
cup dark brown sugar
1 teaspoon dry mustard
cup brewed maple walnut flavored coffee
cup bean stock
Soak beans in water to cover, overnight. Add more water if necessary to cover beans by 1 inch and bring to a boil. Reduce heat and simmer 1 hour. Drain, reserving stock. Place beans in heavy casserole with lid. Add remaining ingredients and stir gently until mixed. Bake at 350 covered for 3 hours, checking every 30-45 minutes, and adding more bean stock as needed to keep from drying out.
