Brewing coffee is a work of science in which numerous elements, including the three T's of coffee brewing, must align in order to extract the ideal coffee flavor. Last month we looked at Time. Now it's time to take a deeper look at the second T of proper brewing---Temperature.
The temperature of the water during the brewing cycle affects the flavor and extraction of coffee. The ideal water temperature for coffee brewing is between 195F to 205F (91-94 C). Temperature has a great influence on how brewed coffee will taste. The Coffee Brewing Handbook by SCAA states, "hot water removes the coffee-flavoring solubles effectively and rapidly." Brewing water at cooler temperatures will result in lighter extraction within the same time frame, thus leaving flavor behind and may result in a flat taste. Alternatively, brewing at a temperature range that is too hot will result in undesirable bitter flavor in the coffee.
